End of Year Review + Happy Herbivore Light & Lean Give-a-Way!!

Well, here we are; there are only 5 days left in 2013. I can’t believe another year has flow on by!

For me, 2013 marked the third anniversary of my vegan adventure (and my third wedding wedding anniversary). It also brought this little guy into our lives.


I can barely remember what life was like without my fur-baby. He sure made moving to another state in the late fall a lot better! (Going back to work after being home with him for 5 months was heartbreaking. I don’t know how people leave their human babies; the sad look in those eyes. Oy!)

2013 was a bit of light blogging year for me, mostly due to lack of content. My diet has a changed a bit – gotten a bit simpler – which has meant less recipe creations to share with you. I have some ideas on ways to continue to share food adventures with you, though, so that, along with a new blog (so excited!!) should make for some interesting blog posts in the coming months 🙂

To bring this year to a fitting close, I’m sharing a give-a-way with you. Woohoo!!

Vegan MoFo Fail

Ok. I admit it. I got in over my head this year and failed miserably at MoFo’ing. (Yup. Just turned that into an adjective.) mofo 2013 FAIL

I could blame it on moving. I could blame it on – wait – I am going to blame it on moving. But, I probably shouldn’t have been so ambitious in the first place.

So, my apologies to those of you who were looking forward to more than two favorite vegan things last month.

But, I’m going to make it up to you! An apology for empty promises is not enough. Nope, not nearly enough.

So, what about a give-a-way?

Raw & Simple Book Review & GIVE-A-WAY

Have you joined the Raw Fusion Reset yet? No? There’s still time! This month we’re focusing on getting back on track with our high raw eating plan. Next month, we’re going to focus on reducing the fat. But, before we get there, I want to celebrate this month of Raw Fusion eating with some recipe inspiration…and a GIVE-A-WAY!

I love Juidita Wingnall‘s books. Her first book, Going Raw,  was one of my first raw food “cook” books, and I absolutely love it.  I was ecstatic to see the release of her new book, Raw & Simple, because I knew it wouldn’t disappoint. And it hasn’t!

Raw & Simple offers “100 truly quick and easy recipes for the raw food lifestyle.” Rawesome!

The recipes in Raw & Simple don’t require a dehydrator, use easy to find ingredients, and offer easy preparation instructions. All huge bonuses for new raw food followers and anyone short on time – or skills. Recipes work their way through the food chain, including delicious breakfast ideas, soups, side dishes, appetizers, salads, main dishes, snacks and desserts. (A raw food cookbook wouldn’t be a raw food cookbook without a healthy dessert sections!) There are even a few easy fermented recipes, which is a bonus for me. I love fermented foods, but I still find them very intimidating. And, combined with tips on how to stock your raw food kitchen and pantry and lifestyle and weight management strategies, this book really packs a punch in less than 200 pages.

One of the best aspects of this book is the abundant use of photos. Nearly every recipe has a full page, full color photo. Drool!

A few of my favorite recipes (so far!) include the Morning Scramble (pp 42-42), Mushroom Miso Soup (pp 78-79), Cauliflower Smash and Mushroom Gravy (pp 92-93), Sweet Chili Daikon Salad (pp 104-105), and the Chocolate Haystacks (pp 148-149). I’m getting hungry again just thinking about these little treasures!

The New Green Smoothie Diet Solution Review & GIVE-A-WAY!

Farmer’s Markets are starting to pop-up. Strawberries are showing up in droves at the grocery store, and asparagus is available at the co-op down the street. Yup. Summer is just around the corner. (Well, for my Northern hemisphere readers, anyway *wink*) And I don’t know about you, but I’ve got some winter weight to get rid of before the shorts and bathing suits come out of storage.

One way I’m getting myself back on track and celebrating the change in seasons is by doing a 30 day raw challenge. The group is closed, meaning you’ll have to ask for membership, but everyone is welcome – even non-vegans. Spring into Healthier Eating: Plant Powered 15 (Review & Give-a-Way!)

Guess what…It’s time for another give-a-way!

Today, we’re reviewing the newest ebook of long-time plant-based powerhouse, Dreena Burton. Dreena’s new collection of recipes is titled Plant Powered 15, and includes 15 delicious plant-based recipes, which includes breakfast, dips and dressings, soups, main courses, and desserts. So far, I’ve tried the Green Goddess Dressing and the Almond Blondies, and holy kale! Soooo good! My favorite part about the Green Goddess Dressing is it’s secret ingredient…beans! And, big bonus, it contains only a tiny bit of overt fat (a smidge of tahini)! No oil, no avocado – just beany, herby goodness. Mmmm…!

Not to be outdone, the Almond Blondies pack a powerful, healthy, sweet punch with dates, almond meal, maple syrup and coconut sugar. Throw in a healthy does of Omega 3’s with some chia seeds (They’re a great binder!), and you’ll be sneaking healthy goodness into dessert time by tonight!

Sticky Almond Blondies

These are positively delicious. They have the dense, sticky, decadent texture and
quality of a traditional blondie, yet are made with wholesome ingredients – and no flour
or oil!

1 tbsp ground white chia
1/4 cup pure maple syrup
1/2 tbsp freshly squeezed lemon juice
1 1/2 tsp pure vanilla
1/2 tsp black-strap molasses
1/2 cup pitted dates, lightly packed
1/2 tsp baking soda
1/4 + 1/8 tsp sea salt
few pinches freshly grated nutmeg
2 1/2 cups almond meal
1/2 cup coconut sugar
2-3 tbsp nondairy chocolate chips (optional)

Preheat oven to 325°F. In mixer fitted with the paddle attachment, add ground chia,
maple syrup, lemon juice, vanilla, molasses, and dates. Process on low speed to first
incorporate, and then increase speed slightly to fully pulverize and smooth dates. Once
smooth, turn off mixer and add baking soda, salt, and nutmeg – mix just briefly and then
add almond meal, and coconut sugar. Process on low speed until mixer just comes
together (do not over-mix). Transfer mixture to an 8” x 8” brownie pan, and press in with
a spatula. If using chocolate chips, lightly press into top of batter. Bake for 20 minutes.
Remove, let cool completely, and cut into squares. Squares can be refrigerated for a
week or more (as if they’ll last)! Makes 16 blondies.

Chocolate Note: I usually make these without chocolate chips, and sometimes I’ll simply
sprinkle a few chips over top of half the batch – either way, these are crazy-good!
